I began to self-host a Minecraft server using Crafty Controller, an Excalidraw instance, Docmost to replace Notion, Plane to replace Jira, and Penpot to replace Figma. To be able to access them from the internet, I used Nginx Proxy Manager to set up reverse proxies with SSL. You can use Traefik or Caddy instead, but I enjoyed the ease-of-use of NPM. For a dashboard solution, I started with Homarr, but later switched to Homepage because I'm apparently incapable of making a decision and sticking with it.

It is more feature rich (or bloated, depending what you need) and complex to set up, defined as "Open-source live-chat, email support, omni-channel desk. Mail-in-a-Box helps individuals take back control of their email by defining a one-click, easy-to-deploy SMTP+everything else server: a mail server in a box.
I looked into Purelymail when searching around for good email solution. Google Workspace was getting a bit costly and there were too many things I did not need.
Zoho Mail provides another option - $1.95 per month I think for my use where I am (AU) and has all the features I need for my small indie business.
One other option I tried was to actually run mail myself with Linode VPS - https://mailinabox.email/
I know it sounds a little scary at the start running your own thing, but so far it's been working out great - zero issues so far. I may turn off Zoho one day and go fully into self-hosted option.

Depending upon which OS are on. If Android - Briar is the most famous and obvious choice. On iOS? There are not any options really but wasn't any usable one around a year back the last I had checked.
On iOS there are not many options for P2P w/o Internet (I assume that is what you meant - otherwise if you want P2P over Internet then there are some options although not really "truly" P2P of course - and of course if Internet is shut down or overwhelmed then it will be down). There's https://github.com/berty/berty (the last time I tried it was crashing incessantly but it might have improved). I do not know of anything else really (there might be few but I am not sure).
