Another option that was often suggested to me was building the search index with a library such as https://github.com/nextapps-de/flexsearch and distribute the index than to the client and handle it one the client. But yeah sounds like a lot of overhead and I haven't tried it.

There is also the template prettyBasicMaths, which is a basic template that uses KaTeX, which is similar to MathJax. If you're unfamiliar, this is basically what renders the math equations that you input in plain text. The main difference between KaTeX and MathJax is that KaTeX is much, much faster. It also uses a library called fitty, which allows you to make the equations font-size automatically fit your screen. (I wanted to showcase both inlines ($x$) and blocks ($$x$$), which is why I basically put the answer into the question, in practice this is completely nonsensical of course)

For styling strings in my app, I have been using SwiftRichString library for UIKit with a UIViewRepresentable of UILabel, however I started having lots of problems with UILabel's layout when embedded in SwiftUI. So I decided to use parts of SwiftRichString to create a SwiftUI version of it. XMLText doesn't support links and images due to SwiftUI limitations, but hopefully those will come after SwiftUI improvements in the future.
I won't go into detail about how to map a character into its Shift JIS code for now, as there are good libraries for the job (iconv-lite comes to mind, and you can even have a look to the actual table if you want to whip up your own solution). It's sufficient to say that we'll need 13 bits (213 = 8192) for each one of them.
