In order to achieve the same kind of thing for opening more menus at once, I bet you could find the function that's called when opening a menu in Blizzard's addon source code, available here and replace it with your own implementation which does not close the other menus, or at least the menus you want to leave open.

Help keeping Accessibility feature working.
As for extracting the files, there is a way and I'll link you how to do it but I honestly never did it because you can get access to the files online which is less work by checking this GitHub for code, this one for textures or this online tool for almost anything related to WoW development for example. If you really want to extract from your game, this is how you do it.

A huge amount of the native UI is implemented exactly the same way as addons. The game even gives you a way to dump it to a folder so you can look at it. Here's one of the many mirrors of the code online: https://github.com/Gethe/wow-ui-source - notice what that first folder is called?
