If you do not want to put files in the dropbox folder on your Mac, you need to work with symlinks, which are a kind of aliases. This can easily be done with a free app named Symbolic Linker.

My suggestion: go for a similar service like iDrive.com, pCloud.com or Sync.com. iDrive is very complete and very affordable. The interface may be a little confusing at first though. pCloud is good, but expensive, as you have to pay extra if you want zero-knowledge encryption. Sync.com is good and affordable. But if you do not want to mess up the structure of your Mac (if you made one), you have to know how to work with symbolic links (symlinks). Which is actually very easy if you use the app SymbolicLinker. (https://github.com/nickzman/symboliclinker/releases)

That's a good point, I was considering mentioning that, but symbolic links, considering they have to be made in terminal aren't really a consumer facing feature. Mind you, maybe OP is a power user who would be willing to do that. I did have a look on apple.stackexchange.com and I found some sort of GUI solution. https://github.com/nickzman/symboliclinker/releases This seems legit but you should use it at your own risk. Make sure you backup everything using Time Machine before you mess with this.
