Plex IS getting worse and Im getting frustrated!
My best client experience is nvidia shield, and using plex-shim-mpv. It uses mpv as the client and supports every format I watch, specifically ASS subtitles for anime get direct played.

HDR on Plex windows client washed out
I found this thread: https://github.com/iwalton3/plex-mpv-shim/issues/31 It seems that changing the config to use http (insecured connection) may solve this issue. I have remote access enabled and I'm signed in to the Plex server, so maybe that's why I didn't have those issues.
So I installed this: https://github.com/iwalton3/plex-mpv-shim. The description is quite good at explaining what it is: "Think of it as an open source Chromecast for Plex. You can cast almost anything from Plex and it will Direct Play". You run the app and see it only in the taskbar. Then you run PleX, select "Shim for Plex" as the media player (chromecast-like icon in the upper right corner of the PleX app), and play some media file. The MPV will pop up playing your video.

Movie not filling the entire screen?
I just don't worry about it until I try and watch the movie and it has black bars, then I just use plex-mpv-shim to watch it, and handbrake it after.

Why does Plex still have no Linux support?
Have you tried this? I use it all the time when watching stuff on Plex. It direct plays every thing I have minus 4K. Note it doesn’t offer the Plex gui. Instead I used my phone to find what I wanted using the Plex app and then cast it to the player

Tangential note about Plex; if you're like me and are disappointed by the default buffering behavior in Plex basically making it near-impossible to seek between already-buffered positions easily, I've been using https://github.com/iwalton3/plex-mpv-shim to cast Plex from my phone to mpv on my linux media box with great success.

Plex like software but can play HEVC files
Plex can play HEVC files but not in the browser. No software supports browser hevc support without transcoding. You can use plex player for windows. But plex player doesn't give the best performance if your hardware doesnot natively support hevc. So you can play it with mpv using this or try jellyfin mpv shim (this will not work with plex will only work with jellyfin)

Any 3rd party players on Windows that support Plex's library?
Finally, on Windows I moved to this one: https://github.com/iwalton3/plex-mpv-shim. It's just a player and doesn't have a library part. I pick a movie in any official Plex client (I prefer iPad), choose the Cast option, and select mpv player as the destination. It starts playing right away.
