  I would do this with a DLRS (https://github.com/SFDO-Community/declarative-lookup-rollup-summaries) concatenation roll-up, myself. The advantages DLRS has over Flow are: 1) you don't have to create a second one for Delete. 2) The Undelete condition is covered.

  I'm not actually sure if this will fit your needs perfectly, as I haven't used it personally but worth checking into Declarative Rollup Summary Helper - we use it in one of our orgs and it works quite nicely for our use case.
