FWIW, needing typed notes is what settled me on Trilium Notes after a foray into a bunch of alternatives, including Notion, Anytype, Obsidian, etc
I realized that efficient note taking and knowledge management generally means (to me) having "dimension lists" (collections of places, people, projects, ...) being referred to in topical notes/journals/events, generally organized as a hierarchy (but not always). Once you come to that realisation (and that your notes system is essentially a glorified RDBMS), you want a system that ensures that "notes of the same type remain as consistent as possible", which Trilium makes easy via Templates and/or Inheritance (attributes can be inherited in the OOP sense, or composed like traits), collections to represent, manage and edit large amounts of notes at once, and emacs-levels of scripting if that's your jam.

Consider Trilium if the collaboration stuff people use Notion for isn't important. It's open source, uses SQLite, and does automatic daily and weekly backups.

Be Careful with Obsidian
Next step is to give up on files/filesystem. As long as it's opensource, there's no lock-in. As long as the storage backend is clean and structured (SQLite or comparable), you actually get so much more (full text indexing, standard querying, ...)
I initially was cautious when going from "bunch of .MD files" to https://triliumnotes.org/ , since it's been pretty great.

French gov's open source alternative to Notion or Outline
It depends on what subset of Notion you use. Nothing (including Notion) is perfect for me. I'd like to build my own eventually, but I'm currently using Obsidian which doesn't hit your "works in the browser" requirement.
One option, which is open source and self hosted, is Trilium[sic], found at https://github.com/zadam/trilium It's open source, so if it's close to what you want, you might be able to adjust it to meet your needs.
Other commercial options include Realm, Tana, and Craft. With varying degrees of "AI".
I really like the UX of Tana for building out graphs of pages with properties, but it's slow to start up, doesn't support math, etc. So it's mainly a UX example for me.

I can also recommend Trilium Notes [1], which I have been happily using for years. It's currently in "maintenance mode", which I personally see as a feature (no risk of bloatware).
Self-hosted, great webapp, optional native clients and works offline.
