Figured it out. Was using https://github.com/Tyler799/Morrowind-2020/blob/master/Morrowind_2020.md, but with Morrowind Rebirth. And https://www.nexusmods.com/morrowind/mods/44321?tab=files caused the boulder's mesh to overlap the door.

For my 2021 playthrough, The core of my load order is my choice between Thastus 2020, Morrowind++, and Morrowind Graphics Guide for graphical recommendations (mostly Thastus,) most of An Alternative to Morrowind Rebirth, most of the mods supported by Beautiful Cities, most of the mods recommended by VFCU, and most of the mods recommended by BTB GI Necro Edit (but not really that mod itself, I heavily edited it since it had too many things that annoyed me.)

For instance, under UI, I created a zip containing all UI mods. Instead of installing 30 UI mods one by one, I only install a 30 UI mods zip. Just be careful with overwriting. As an example, let's say you want to add weapons mods, one of them being Weapon Sheathing 1.6. When creating a bulk zip, don't add Morrowind Optimization Patch, weapon sheathing patch, but rather install it as a single mod to avoid problems regarding weapon sheathing.

The Thastus Guide goes more in detail and takes longer to install. I've used the various iterations of this guide for my past two playthroughs. This one is also mostly graphics mods, but it also covers a few other mods, including quality of life mods, dialogue mods, gameplay mods, a companion, a couple of excellent dungeons, and more.

You mentioned modding and yeah, there are plenty of visual mods and QoL things to make the game easier on modern players if you need/want them. Unlike the other posters, I do use visual mods and my game looks like this (outside Vivec at sunset, random forest on the mainland, Ald'ruhn and Fort Buckmoth after an ash storm) which mostly involved this in-depth guide and my own personal tweaks but you really only need a few mods to make it look more modern than vanilla and run well. (There is also OpenMW, which is great but doesn't work with MWSE so I'm not overly familiar with it.)

That said, YMMV on how good. Something like Morrowind Enhanced Textures + OpenMW or MGE XE will look pretty good and might be completely fine for you, and is certainly easy to do., Following a guide like Thastus 2020, Morrowind Graphics Guide, or Morrowind ++ is another level of commitment but will look better.
Modding Morrowind is a pain

I'm currently using MO2 it to run 370 mods (225 active esps, 30 MWSE mods.) There were some compatibility issues between the mods I had to patch myself but none with MO2. MGE XE, MCP, MLOX, tes3Merge, BSA Registration, and Wrye Mash all run fine through it's internal launcher, and when installing mods I choose 'manual' so I can set the data files directory if needed. I thought this guide goes over the different tools and how to use them pretty well but I was already familiar with modding TES games when I read it and English is my first language.
Morrowind is such a beautiful game perhaps the best one of all the series
