I typically use the Apple Mail macOS client and it has some built-in proxy feature to block trackers that I recommend using. I also developed the MailTrackerBlocker plugin if that feature doesn’t work for you for some reason (older macOS version, etc).

Newsletter services and spy pixels
I already block images by default (which is also great for performance issues), and I'm testing MailTrackerBlocker (https://github.com/apparition47/MailTrackerBlocker). The thing is that the new fad of "journalism over newsletters" makes use of services like Substack, that don't allow the tracking to be turned off. And when I pay for content, I'd like to access all the content, even the images, without having to forfeit my privacy (and non-paying customers should also have that right)

Spy pixels in emails 'have become endemic'
There is a plugin for macOS Mail.app that tries to emulate Hey's tracker blocking.[1] I just installed it and it seems to be working. Also translated all 3 strings to Russian while I'm at it.
