Third try at this. Used the paper trick to level the bed. Nozzle temp is 200 and bed is 55. No upgrades for the v2, it’s all out of the box (aside from the filament). Any tips on what I can do to get a good print?
Your bed is not even. So upgrade your firmware (I recommend the Jyers release, and do a mesh bed leveling.

Tips for BLTouch inconsistencies & UBL Start GCODE
Another important thing I see many people do differently is the start G-Code for UBL. Easiest way to check if tilting worked in UBL, is using view mesh option on printer after tilt. If the mesh is invalid, you wont see any numbers and basically it won't work. Anyways, here is my start GCODE which confirmed to work well. Also, probing margin in your config should be larget than your mesh inset, i.e probing points should be inside your mesh or again you will get invalid meshes. Help with BLtouch
There is a known problem with the BLtouch v3.1 and the Ender 3 v2. There are random failures affecting many people where the BLtouch fails and sends the nozzle crashing in to the bed. This is the reason I have stopped using the BLtouch until a proper fix comes about. - Just installed a v4.2.7 silent board, However the BLtouch doesn’t work anymore. I used the firmware from creality. Any help?

Bltouch crashes into bed
As u/Spirko says do not seem to be a problem related to wiring, the firmware should not be the problem either (as you said you intalled the precompiled Smith3d binary) I would recommend you trying directly Jyers Extensible UI firmware as is the most up to date and focused on the ender 3 v2. https://github.com/Jyers/Marlin Take a look at the Releases section where you have precompiled binaries ready to install. I recommend you E3V2-BLTouch-3x3-v4.2.7.bin or the v4.2.2 depending on your board.

I was trying to install the Creality BLTouch V3.1 Auto Bed Leveling Sensor for the Ender 3 V2. I downloaded the Ender 3 Firmware + Source Code + SD Files + BL Touch and moved the BLtouch to the portable flashdrive. When I plugged it in and turned on the printer it started making beeping noises.
Better yet, go with the Jyers release
