Must have mods?
Dark Codex if you want more OP cheese, like buffing Kineticists, extra Limitless mythic abilities (Limitless Bombs! Limitless Bardsongs!), and bringing back some golden-oldie cheese that Owlcat nerfed, like Elemental Barrage proccing off weapon effects or Kinetic Blasts working with Zippy Magic.

Is Judge Fun?
I haven't tried Judge myself but I think you're going to want the Dark Codex mod which makes Everlasting Judgement also apply to Judgement Aura. So it goes from a finite-use buff to one you can spam for every trash fight. :)

Call of the Wild/ Eldritch arcana for WotR? Or any additional spells mods out there?
Plenty of mods that add spells. DarkCodex and ExpandedContent add probably the most.
-

Seeking an advice regarding an MC Alchemist(grenadier) and how to build the class further
If you're on PC, the Dark Codex and Tabletop Tweaks mods have a few welcome upgrades for Alchemists. DC adds Limitless Bombs as a Mythic ability and TTT adds an alternate capstone: "The alchemist’s bomb damage increases by 3d6."

What would be a good build for a character which is going to be perma polymorphed as soon as I can get greater enduring spells on a merc?
Natural attacks and unarmed strikes are separate things, so most monk abilities won't work while Polymorphed. [Unless you install Dark Codex which adds Feral Combat Training.] You'll keep your monk AC bonus, though.

Azula build
DarkCodex adds a host of new options for Kineticist like extra Infusions (e.g., Blade Rush, Chain), a Kineticist background, more elements, etc. If you want an Azata Kineticist, you can also re-enable Zippy Magic working with (single-target) Kinetic Blasts by turning on the "allows zippy (magic) to work on spell-like abilities" and "makes (kinetic) blasts register as spell like, instead of supernatural" options. Tabletop Tweaks adds a new capstone; I think you can use both mods simultaneously but caveat emptor.
