There’s an open source tool that I use for that called AlDente. You can find it here.
Just noticed the new battery health management at work. I think my MacBook noticed that it never gets unplugged, so now it draws power straight from the charger and leaves the battery at 80%. Neat!

For people not on Big Sur. I have been using AlDente for quite a while now. Manually set the percentage and the battery doesn’t go past that. Even in bootcamp.
