However what should be easily possible is that you have a web service that outputs a black and white image with whatever you want to display and then have that image displayed by using/modifying one of their examples here.
The easiest way to get started with ESP32/Arduino is using Visual Studio Code with PlatformIO. Inkplate has some documentation on their official website and their Github repositories how to get started.
