If you need only SMTP service, AWS SES is good choise. But if you need full self-hosted mail server with many options, I recommend the MailCow project - https://mailcow.email/
Be sure to familiarize yourself with SPF, DKIM, and DMARC before bothering to send anything you need them to get reliable deliverability. If you can't look at the list of items on the https://github.com/mail-in-a-box/mailinabox components list and explain why each choice makes sense or why you would do it differently consider using a pre-packaged system like MIAB while you up your sysadmin/mailadmin game.
I run https://docs.postalserver.io/, use for sending my newsletters, transitional emails from my sites, smtp for other open source apps I use like the adserver, nextcloud, invoice ninja, etc. It took a bit of work and research, but my delivery rate is actually better than what I had using mailgun or elastic mail.
