Since so many people started recommending screen, I felt I had to chime in. I used both screen and tmux extensively for work and I stuck with tmux. Tmux has even a config that you can copy to your home folder and then tweak yourself even more. I am so used to using tmux that I cannot use screen now. One of the things I hated the most was the screen flash while using screen. That really made me look for an alternative.
I build the system when the RPi3 came out and was bugged by the missing gigabit so I looked for an alternative.. RPi4 with 4GB ram is 60 bucks around here. Add a decent microSD and power supply and you're pretty close to the price of my setup. As VPN I use PIA - works without much added latency or dips in bandwith and is pretty easy to setup. I use gluetun as the only container which has access to the wan and route all my other traffic through the container.. The GitHub site contains a tutorial how to connect other docker containers. For my understanding this is pretty bullet proof - if the VPN connection gets down, nothing can access the wan
