It's open source. You would download the source, compile it yourself, run the desktop environment and its applications on top of a kernel you trust and monitor its behavior. If it's running in my computer, I can monitor all the traffic, even the encrypted one (https://mitmproxy.org/). I can compile it in debug mode, and set a breakpoint on any system call I want. Not saying there's no bad code, I haven't checked it. But when software is open source, it's hard to keep bad code hidden for long.
