Fortunately I found ExplorerPatch (https://github.com/valinet/ExplorerPatcher) which basically allows you to have the Win10 taskbars back and customise them how you like. Not perfect, but it removes some of the headaches of Win11

I like the new context menu. Have to needed to use the legacy one much at all. Software just needs to properly support the new one (e.g. 7-zip does this but NanaZip does).

Windows11DragAndDropToTaskbarFix
"Windows 11 Drag & Drop to the Taskbar (Fix)" fixes the missing "Drag & Drop to the Taskbar" support in Windows 11. It works with the new Windows 11 taskbar and does not require nasty changes like UndockingDisabled or restoration of the classic taskbar.
