If you don’t have the ability to do a real project in R but want experience, you can join a group of R users that get weekly data and perform some type of data tidying and then plotting. I would think about the different aspects of what you've been doing in R, what you like, what else you could do, career goals, etc. I would say data handling and visualisation using the tidyverse is really useful skill (see https://r4ds.had.co.nz/ for one very useful resource, but there are many), and knowing your way around linear regression and plotting predictions alongside your raw data is another great one. You could look into modelling, GIS, etc as well. R is a great programming language for many things but it's probably better to think "what do I want to do" and work on related skills rather than just "being good at R", if that makes sense?
