The thing is, that you have to set an EFI variable for the OS to be able to see the iGPU, see apple_set_os.efi. I have such a Macbook and I loath it, I compiled a program to manage the mux device, which cant be managed by tools like vga-switcheroo. And I wrote another script to completely power down the dGPU to improve batterylife. It's a pita.
And meanwhile in the real world the actual current MS has open-sourced tons of software, has become the largest OS contributor and even published its own Linux distribution "CBL-Mariner" (altthough only available on Azure)
A lot of Apple software including the operating systems is open source, though in practice many of the key components that you might need to solve a problem or understand a bug are missing from these repositories.
