Mastodon and Pleroma are very similar to Twitter. Both are based on the activitypub protocol, so if one group sets up a pleroma instance and another sets up a Mastodon server, they can still communicate together. Ultimately between the two, I think it's up to personal preference, but Mastodon is very popular.
Aether looks closer to Reddit, but it describes itself as a "distributed," not "federated" network. At first glance that means there is one global Aether network that is supported by the many nodes. If you're looking to build a private network, this might not be a solution for you. But if you like the Reddit feel of threads and subs, you could look up Lemmy which is powered by activitypub just like Mastodon.

You could try to use Jami. It's peer-to-peer, encrypted end-to-end and users on the same network can communicate even if there's no internet access.
