Issues, wikis, releases, CI runs, and all that other stuff GitHub does beyond just hosting the Git repo, are harder to mirror, because they aren't part of Git. For example, https://github.com/matomo-org/github-issues-mirror exists - but isn't part of Gitea. Issues are kind of a big deal to me, because issue numbers may be mentioned in change messages, "(Fixes #132)" or so, and if you don't have the original set of issues, the meaning of that is entirely lost.
You might also want to look at https://github.com/dogsheep/github-to-sqlite for saving issues, pull-requests, etc
