The best way to learn is always going to be to try to do it yourself - try to download some publically available genomics or RNA-Seq datasets and run through the existing tutorials. The R for data science textbook (https://r4ds.had.co.nz/) is what I started with - once you have the data science fundamentals down, the switch to bioinformatics is basically just learning specific packages and working with biological data.
