OsmAnd: while some parts of the app are definitely open source, the UI (arguably the most important part of most apps) is proprietary (CC-BY-NC-ND), as UI modifications can not be made and published to app stores, unless you receive written permission from the developers (I actually use Organic Maps for that reason)

Kiwi Browser: source code does not seem to build or contain the actual Kiwi Browser and the source is completely outdated, the binary is updated regularly though

ZeroTier License is Mariadb's Business Source License 1.1. But it'll change @2025 to apache license v2.

There's an iOS anti-malware application called iSecureOS. It claims to be open source uses a slightly modified version of the GPLv2 that GitHub still detects as GPLv2.
There was an iOS jailbreak called unc0ver that was open source but then they decided that it wouldn't be anymore. But they kept publishing releases on the GitHub repository where the README said the project was open source. Unfortunately for me, I didn't notice this until I had bought a phone thinking I could jailbreak it using an open source jailbreak (The phone was really cheap though, so it doesn't actually matter much.).
Someone made an "open-source recreation of Reddit's /r/place" except they use a modified version of AGPLv3 that prohibits charging for access (though ads are allowed). This case may be particularly interesting because the AGPLv3 says:
