I think you are right to look for projects to code. May I humbly suggest you look at some Rust versions of common Unix command-line programs that I wrote for my book, Command-Line Rust (O'Reilly, 2022): https://github.com/kyclark/command-line-rust I think writing lots of small programs and learning how to use test-driven development to understand your code and verify your programs is a terrific way to learn.
