Instead of making an arcade stick using an existing GC controller, have you considered using BlueRetro? Basically "any" Blue-tooth capable controller can be paired with an ESP32, including arcade sticks. Total cost is probably $20 ($10 for the ESP32 and another $10 for 4 GC extension cables that can be harvested for connectors) plus any shipping costs.
