If you want to go "hard mode" on Kubernetes + Ansible, I'd checkout https://github.com/kubernetes-sigs/kubespray - virtually every knob available, you can really get your hands dirty.

Once you have Kubernetes, you might checkout https://kubevirt.io/ for VMs instead of more ansible. I'd personally ditch OpenStack - it's just not terribly useful knowledge - and most companies that do use it will happily pay you to learn on the job.
