You can check out ytdl-sub. It's written specifically for formatting youtube videos to show in Jellyfin/Plex/Kodi/etc with artwork as TV shows, movies, or whatever you want.

Highly recommend this fork - https://github.com/JordyAlkema/Youtube-DL-Agent.bundle/ - you can invoke youtube-dl with --write-info-json and --write-thumbnail and not lose your metadata if the video is removed from Youtube :)
