If you've already removed the folder from the library, then it's gone from the database, and I'm not sure if that's something Tautulli tracks. The server logs would probably show it, but it would have had to be added somewhat recently, as Plex automatically removes old logs after a while. However, if you have an automatic backup from before you removed the folder, you can open that up in sqlite3 (or DB Browser for SQLite) and view the created_at date in the section_locations table.
