Now, to be completely transparent I don't think I'd actually build such a thing myself, at least not for home use. I'd still create the two pools and take regular snapshots of the primary storage pool, but I would use (Borg)[https://www.borgbackup.org/] to back up the data to the secondary pool, possibly sourcing it from a snapshot to prevent data from changing in-flight.
