As far as I know gamescope doesn’t work with vrr so is probably the same thing as when you turned vrr off. https://github.com/Plagman/gamescope/issues/199. I think vsync is also forced when you run with vrr off in a wayland window which would explain the extra input lag you notice.
Using kb&m? Mouse movement will disable vrr.
