I have been using https://n8n.io self-hosted. It's not as good as most of the paid alternatives, but it does work pretty well once you get used to its quirks. Not too hard to set up either.

However if you have some basic scripting knowledge, you should look at adnanh/webhook or ncarlier/webhookd. I would recommend these if you have some functions that you already know you want stable and production ready, I use them for things like Gitlab/Github webhooks. The fact that they are configured individually by yaml makes me more confident they’ll continue running as they should.
