I tried installing Pop on my laptop with btrfs following this guide. I have several issues.

You are not looking at the most up-to-date, tested version, which is: https://github.com/spxak1/weywot/blob/main/Pop_Btrfs_Subvolumes_with_Timeshift.md. I edited it myself to dodge the issue which I think you are running into.

Besides all is not despair and sadness because there is currently a proposal (https://github.com/pop-os/distinst/pull/286) to add btrfs as a target file system from the installer, so that all the post-installation footwork will no longer be necessary). As you can see it must still go through QA but it's promising!
