I did a lot of searching last night and couldn't find any easy way to get the SVT-AV1 library enabled in FFmpeg on my MacBook. After a bit of digging I was able to fork https://github.com/grusell/homebrew-svt-av1 to update the build binary from v0.9.0 to v1.1.0 and fork https://github.com/georgemcarlson/homebrew-ffmpeg to use --enable-libsvtav1 and depend on the former fork. So in the end, since I already had Homebrew installed on my MacBook I was able to install FFmpeg with SVT-AV1 v1.1.0 by running the following 4 terminal commands.

I always use the Windows builds linked on ffmpeg.org.
