Is there an app like Photos.app that can let you change a video's thumbnail/poster frame (and crop/trim)? Also without needing to make a whole project, if possible.

You can trim or 90 degree rotate clip directly in Finder (there is trim and rotate button under preview, if not enable it in quick actions) or in QuickTime player. Also for quick triming/cuttig segments is great LosslessCut https://github.com/mifi/lossless-cut or brew install --cask losslesscut it is based on ffmpeg and works great and without recompression.
