Multiple PiHole nodes is the best way forward in my opinion since it will ensure that ad/tracking blocking will work no matter what. Personally, I run 3 -- two that server my LAN and a third that's my test device to test new versions of PiHole, new adlists, or just to help troubleshoot what domain(s) I may need to whitelist to get a site to work properly. If you decide to run two nodes, look into the gravity-sync project which would keep the nodes in sync so you don't need to manually manage both.
