Not exactly an App to follow progressions in learning but Trello's alternative, Planka, is pretty good.
It depends on what you're learning, but anki is open-source. Their server is not, but, there's an open-source third-party server that you can use to self-host, see https://old.reddit.com/r/Anki/comments/giy6b2/selfhosted_anki_server/ I haven't tried self-hosting it though, so I can't say how well it works.
