A great cheap option for a POV camera would be the recently released RunCam Thumb. This camera was meant for FPV drones, but it would work great for K'nex coasters due to its incredibly light weight and small size. It weighs less than 1/10th as much as a GoPro and can record 1080p video at 60fps. It lacks built-in stabilization, but open-source stabilization software like Gyroflow has been shown to provide great results with this camera.
