If you want to use encryption in a live/running environment I'd suggest you look into cryfs or something similar. Server-side encryption works, client-side is over hyped IMO. Encryption at rest has been around since forever and works in most situations reliably. If you need to worry about evil maid attacks I'd argue you have the money to spend on other security means. But that's just my opinion on that matter.
