I'm not aware of this being available on the PS5, but it's called head tracking and exists in some racing and flight sim games on PC. The budget meta is the ps3 eye camera (it's cheap and can do 60-75fps) and AiTrack to read your face which outputs to Opentrack. I don't play too many racing games but I can confirm that Assetto Corsa on PC supports it. This method just uses a camera to map your face instead of you wearing something on your head (like TrackIR).
