make clangd_extension work w/ lsp-installer

I've been trying to setup clangd_extensions, but since the config I'm running, copied from NeovimFromScratch, I'm not able to fully make it work. What I did, was to make an if clause inside the lsp-installer.lua, which returned without making changes (lua/armin/lsp/lsp-installer.lua) and require the setup of clangd_extensions, which started it and the clangd server as well. Problem there is, that for some reason my mappings are not used anymore and the clangd functions are not working either, except for symbolTypeInfo.
