I'm loving Trilium, it's a simple UI but still very powerful. Pretty easy to setup, can run either only on one device locally, or if you want to use the server version on your local network, that also works.
I created wikmd for this. I can access my documents through the browser and because it's file based, you can still access the Markdown documents through your explorer. It's also easy to setup!
