Joplin
Joplin - the secure note taking and to-do app with synchronisation capabilities for Windows, macOS, Linux, Android and iOS.
Currently, I use Joplin. It works well enough, you can sync notes through a Cloud or Nextcloud, and they also have a Joplin server if you don't have Nextcloud and want a self-hosted solution. It's only in beta, but it works well enough for me. Plus, it's all in docker and easy to set up. But again, it's the closest app I managed to find to OneNote, but it's not nearly as versatile or featureful. It, too, uses Markdown. You might also want to take a look at this list, you might find something you like.

By the way, I developed a tool to export OneNote notebook into Joplin export format or markdown format. Maybe it can help you to evaluate the different alternatives : https://github.com/alxnbl/onenote-md-exporter
