It should be via this portal (basically a way for apps to request permission to the user): org.freedesktop.portal.RemoteDesktop https://github.com/flatpak/xdg-desktop-portal/blob/master/data/org.freedesktop.portal.ScreenCast.xml and there is also a org.freedesktop.portal.RemoteDesktop for apps like AnyDesk and TeamViewer. I believe the problem is that the apps (in case of Google Meet, it's the browser like Chrome / Firefox) do not still support them...
