Another option is to check out the vgpu unlock project. It allows the resources of a GPU to be split between host and VM. However, it only works on newer Nvidia GPUs. (You can look up valid hardware IDs in the project's python script and a site like this.) There has been some discussion about vgpu here, but I've never done it myself.

I've thought about a five monitor setup myself. One option is to use a cheaper older/refurbed prebuilt to power two of the monitors (most have two video outputs going back 10 years). It should be possible to use Barrier software allowing mouse and keyboard to work on the other monitors. Should be good enough for watching video or monitoring something. Might also run a server or something on the extra computer.
