I think the first stage bootloader will support about anything - SPI, dual SPI, quad SPI... The second stage bootloader sets up XIP, and I don't think any of those measures is really supported by the part you linked. This does *not* mean it cannot work, though. There's e.g. a generic second stage bootloader you could use: https://github.com/raspberrypi/pico-sdk/blob/master/src/rp2_common/boot_stage2/boot2_generic_03h.S - it just will be very very slow in comparison.
