Advice would be to go straight to a VM running Pterodactyl for the game server management. Truecharts (https://truecharts.org/) can handle most of the rest through the apps tab. I'd also advise keeping one of those boot nvme's to make a pool for your VMs and apps if you don't mind losing the redundancy. They run very nice and fast on the SSD.
