The latest release of OpenCorePkg has a commit in which HideAuxiliary is set to true in the Sample.plist file: https://github.com/acidanthera/OpenCorePkg/commit/f2bc242d9dcfbad624b3b7724e331640634ab5c2. In the commit comments, someone asked why this was done as it only allows Windows boot option to show and hides the others, and the reply was that it should not matter as this was only a Sample.plist file. I'd like to point out that this does matter, since the first instructions in the dortania guide are to copy this Sample.plist file and rename it config.plist: https://dortania.github.io/OpenCore-Install-Guide/config.plist/#creating-your-config-plist.
