Bitwarden's official servers are not open source. They also have a self-hostable version (for testing only, or for non-commercial environments) which is much different than their official offering. The reason this is for testing only is because of the custom licensed software they include.
Alternatively, you can self-host with Vaultwarden, a FOSS implementation that works with normal Bitwarden clients. As you can see, though, Bitwarden is a bit of a mess.
