For now, I've found this plugin: https://github.com/wellle/targets.vim. I've set up 2 workflows with it which are not great:
I'm using surround plugin which is great, but it allows only for surrounding text in single * (which makes text italic in markdown). I's cumbersome to manually add another pair of * around, "." doesn't work either.
NOTE:
