I use FreshRSS a ton as well but based on your “The Ask” section, why not use a tool meant for downloading your YT subscriptions and placing the videos into folders for Plex to scan over. I do this with https://github.com/Tzahi12345/YoutubeDL-Material and had pretty good success with viewing in Plex using their folder view which effectively sorts the channels or playlists since that is how YoutubeDL-Material saves them.
